Cheese Potato Casserole

6 medium potatoes
1/3 cup chopped onion
6 ounces shredded cheddar cheese, about 1 1/2 cups
1/4 cup butter, melted
1 can cream of chicken soup
1 cup dairy sour cream
bread crumbs

Cook unpeeled potatoes until done. Chill, peel and grate or slice into a large bowl. Toss potatoes lightly with onion and cheese. Mix melted butter and soup together and add to potatoes. Stir in sour cream. Spread into a 1 1/2 quart casserole dish. Top with bread crumbs. Bake at 350 for 1 hour. Serves 6 to 8.





Six Minute Chocolate Cake

1 cup sugar
1 1/2 cups flour
1/2 cup cocoa
1 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla
1/2 cup oil
1 cup cold water
2 tbl. vinegar

Combine all ingredients except vinegar in 8 inch square pan. Add vinegar, blend quickly. Bake at 375 for 20-25 minutes.

Frosting

1/2 cup sugar
1/2 tsp. vanilla
8 oz. cream cheese
2 tbl. half and half
